Apple Pancake

Ingredients

  • 2 eggs
  • ½ apple, thinly sliced
  • 1 tbsp almond flour
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • ½ tsp olive oil or ghee
  • (Optional) pinch of vanilla or cardamom

Instructions

  • Whisk the eggs together with the almond flour, cinnamon, lemon juice, and optionally vanilla.

  • Heat the olive oil in a small frying pan.

  • Place the apple slices in the pan and cook for 2 minutes until they start to soften.

  • Pour the egg mixture over the apples and cook on low heat for 4–5 minutes until the bottom is golden brown.

  • Carefully flip the pancake and cook for another 2 minutes on the other side.

Air fryer option: – Preheat to 170 °C – Pour the batter with apple into a small ovenproof dish, bake for 10–12 minutes

Serving Tip

The taste of apple pie, the texture of a pancake — perfect for breakfast or a light lunch. Serve on a white plate, with a few extra apple slices and a sprinkle of cinnamon on top. For extra freshness: add a few drops of lemon juice just before serving.

Storage Tip

Store covered in the refrigerator for up to 1 day. Reheat briefly in the pan or for 2 minutes in the air fryer at 160 °C.
