
Ingredients
- —200 g soft goat cheese (plain, without additives)
- —2 tbsp sun-dried tomatoes, finely chopped
- —4 black olives, finely chopped
- —1 small tomato, diced (seeds removed)
- —½ tsp Italian herbs (or oregano/basil)
- —1 tsp olive oil
- —½ tsp lemon juice
- —Pepper to taste
- —1 tbsp fresh parsley or basil, finely chopped (for the outside)
Instructions
Preparation Chop the sun-dried tomatoes, fresh tomato, and olives into small pieces.
Mixing Place the goat cheese in a bowl, add olive oil, lemon juice, herbs, and pepper. Mix until creamy.
Filling Gently fold in the tomato, olives, and sun-dried tomatoes.
Shaping Place the mixture on a piece of parchment paper and shape into a compact roll about 10 cm long.
Chilling Let it firm up in the refrigerator for 1–2 hours.
Finishing Roll the chilled roll in the fresh herbs (and optionally nuts) to coat the outside beautifully.
Serving Tip
Serve on a wooden board or small plate with raw vegetables (cucumber, celery, carrot) or rye crackers. Fresh, flavorful, and full of southern charm — an elegant appetizer that fits perfectly within the Metabolic Diet. Serve chilled, sliced with some extra fresh herbs or a drizzle of olive oil on top.
