Antipasto Goat Cheese Roll

Ingredients

  • 200 g soft goat cheese (plain, without additives)
  • 2 tbsp sun-dried tomatoes, finely chopped
  • 4 black olives, finely chopped
  • 1 small tomato, diced (seeds removed)
  • ½ tsp Italian herbs (or oregano/basil)
  • 1 tsp olive oil
  • ½ tsp lemon juice
  • Pepper to taste
  • 1 tbsp fresh parsley or basil, finely chopped (for the outside)

Instructions

  • Preparation Chop the sun-dried tomatoes, fresh tomato, and olives into small pieces.

  • Mixing Place the goat cheese in a bowl, add olive oil, lemon juice, herbs, and pepper. Mix until creamy.

  • Filling Gently fold in the tomato, olives, and sun-dried tomatoes.

  • Shaping Place the mixture on a piece of parchment paper and shape into a compact roll about 10 cm long.

  • Chilling Let it firm up in the refrigerator for 1–2 hours.

  • Finishing Roll the chilled roll in the fresh herbs (and optionally nuts) to coat the outside beautifully.

Serving Tip

Serve on a wooden board or small plate with raw vegetables (cucumber, celery, carrot) or rye crackers. Fresh, flavorful, and full of southern charm — an elegant appetizer that fits perfectly within the Metabolic Diet. Serve chilled, sliced with some extra fresh herbs or a drizzle of olive oil on top.

Storage Tip

Keeps well for 2–3 days in the refrigerator, properly covered in foil or a glass container.
