
Ingredients
- —2 tbsp full-fat yogurt
- —1 tsp olive oil
- —½ tsp curry powder
- —½ tsp mustard
- —1 tsp lemon juice
- —pinch of pepper
Instructions
Gently warm the yogurt with olive oil over low heat or in the microwave. Add the curry powder, mustard, lemon juice, and pepper, and stir until lightly warmed. Pour the warm dressing over your vegetables.
The olive oil makes it wonderfully saucy — a bit like a light curry sauce, but fresh and mild at the same time.
Serving Tip
Delicious with chicory.
