Tomato and Mozzarella Bake

Ingredients

  • 120 g small tomatoes (cherry or plum tomatoes)
  • 100 g mozzarella (buffalo or light)
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar (sugar-free)
  • Dried thyme
  • Fresh basil
  • Pepper, sea salt

Instructions

Preheat the oven to 180 °C. Place the tomatoes in a baking dish and drizzle with olive oil, balsamic vinegar, salt, pepper, and thyme. Bake for 15 minutes until the tomatoes are soft. Add the mozzarella and bake for another 5 minutes until the cheese melts. Garnish with fresh basil. Air fryer: 180 °C – 10 to 12 minutes (add mozzarella for the last 3 minutes).

Serving Tip

Delicious with some grilled vegetables or a small handful of salad with vinaigrette on the side.

Storage Tip

Store for up to 1 day in the refrigerator; reheat in the oven before serving.
