Ingredients
- —160 g salmon fillet, finely chopped
- —1 spring onion, finely sliced
- —1 small clove of garlic, minced
- —1 tablespoon coriander, finely chopped
- —1 teaspoon lemon zest
- —1/2 teaspoon chili flakes or fresh red chili
- —1 tablespoon yogurt (full-fat, goat, or sheep yogurt)
- —1 teaspoon olive oil (for frying)
- —Pepper and sea salt to taste
- —Optional: 1 tablespoon finely chopped runner beans or carrot for extra crunch
Instructions
- Mix the finely chopped salmon with spring onion, garlic, coriander, lemon zest, chili, yogurt, pepper, and salt.
- Shape the mixture into small, flat cakes.
- Heat the olive oil in a pan over medium heat.
- Fry the salmon cakes for 2–3 minutes on each side until golden and firm.
- Serve with extra coriander and a fresh squeeze of lemon.
Serving Tip
Light, fresh, aromatic, no sugar, no deep-frying — pan-seared, clean, and modern. Place the cakes on a leaf of romaine lettuce with a few thin slices of cucumber for a refreshing, Thai-inspired style.
