Stir-Fried Brussels Sprouts with Beef Strips and Peanut Sauce

Ingredients

  • —300 g Brussels sprouts
  • —150 g beef strips
  • —1 red onion
  • —1 clove of garlic
  • —30 g peanut butter
  • —100 ml coconut milk
  • —10 ml soy sauce
  • —10 g sambal
  • —oil
  • —pepper
  • —salt

Instructions

  • Clean the Brussels sprouts and cut them into quarters.

  • Peel and finely chop the red onion.

  • Mince the garlic.

  • Heat a splash of oil in a wok.

  • Quickly sear the beef strips over high heat until browned, seasoning with pepper and salt.

  • Remove the beef from the wok and set aside.

  • Sauté the red onion and garlic in the same wok.

  • Add the Brussels sprouts and stir-fry until tender-crisp and lightly browned.

  • Meanwhile, heat the peanut butter, coconut milk, soy sauce, and sambal in a small saucepan, stirring until smooth.

  • Return the beef strips to the wok with the Brussels sprouts.

  • Pour the peanut sauce over and mix everything well.

  • Let it warm through gently for another 2 minutes and serve immediately.
