
Stir-Fried Brussels Sprouts with Beef Strips and Peanut Sauce
Ingredients
- —300 g Brussels sprouts
- —150 g beef strips
- —1 red onion
- —1 clove of garlic
- —30 g peanut butter
- —100 ml coconut milk
- —10 ml soy sauce
- —10 g sambal
- —oil
- —pepper
- —salt
Instructions
Clean the Brussels sprouts and cut them into quarters.
Peel and finely chop the red onion.
Mince the garlic.
Heat a splash of oil in a wok.
Quickly sear the beef strips over high heat until browned, seasoning with pepper and salt.
Remove the beef from the wok and set aside.
Sauté the red onion and garlic in the same wok.
Add the Brussels sprouts and stir-fry until tender-crisp and lightly browned.
Meanwhile, heat the peanut butter, coconut milk, soy sauce, and sambal in a small saucepan, stirring until smooth.
Return the beef strips to the wok with the Brussels sprouts.
Pour the peanut sauce over and mix everything well.
Let it warm through gently for another 2 minutes and serve immediately.
