
Salmon Parcel with White Asparagus and Vegetables
Ingredients
- —150 g salmon fillet
- —250 g white asparagus
- —100 g cherry tomatoes
- —0.5 red onion
- —1 tsp Mediterranean herbs
- —1 tbsp lemon juice
- —pinch of salt
- —pinch of black pepper
Instructions
A light and pure dish where salmon and white asparagus come together, gently cooked with fresh vegetables and herbs, fitting within a balanced meal.
Preheat the oven to 180°C
Peel the white asparagus and trim the tough ends
Halve the cherry tomatoes
Slice the red onion into thin rings
Prepare a sheet of baking paper and arrange the asparagus on it
Place the salmon fillet on top of the asparagus
Scatter the tomatoes and onion around it
Sprinkle with Mediterranean herbs, salt, and pepper
Drizzle with a little lemon juice
Fold the parcel closed
Bake for 15–18 minutes in the oven until the salmon is cooked through
Carefully open the parcel and serve immediately
