Salmon Parcel with White Asparagus and Vegetables

Ingredients

  • 150 g salmon fillet
  • 250 g white asparagus
  • 100 g cherry tomatoes
  • 0.5 red onion
  • 1 tsp Mediterranean herbs
  • 1 tbsp lemon juice
  • pinch of salt
  • pinch of black pepper

Instructions

A light and pure dish where salmon and white asparagus come together, gently cooked with fresh vegetables and herbs, fitting within a balanced meal.

  • Preheat the oven to 180°C

  • Peel the white asparagus and trim the tough ends

  • Halve the cherry tomatoes

  • Slice the red onion into thin rings

  • Prepare a sheet of baking paper and arrange the asparagus on it

  • Place the salmon fillet on top of the asparagus

  • Scatter the tomatoes and onion around it

  • Sprinkle with Mediterranean herbs, salt, and pepper

  • Drizzle with a little lemon juice

  • Fold the parcel closed

  • Bake for 15–18 minutes in the oven until the salmon is cooked through

  • Carefully open the parcel and serve immediately

Serving Tip

Serve this parcel straight from the oven for a fresh and light spring meal.

Storage Tip

Store covered in the refrigerator for up to 1 day and reheat gently.
