Ingredients

  • 400 g carrots, cut into long pieces or small whole baby carrots
  • 2 teaspoons olive oil
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon thyme or rosemary
  • Pepper and sea salt to taste

Instructions

- Preheat the oven to 200°C (400°F).

- Toss the carrots with olive oil, lemon zest, lemon juice, thyme, pepper, and sea salt.

- Spread them out on a baking sheet lined with parchment paper.

- Roast for 20–25 minutes until tender and lightly caramelized.

- Serve warm.

Serve the roasted carrots in a lovely dish with a pinch of fresh thyme on top. Sweet, tender, and aromatic — simple roasted carrots with a fresh, herby twist.
