Oven-Baked Chicken with Tomato, Bell Pepper, and Spiced Bulgur

Ingredients

  • 150 g chicken breast
  • 1 medium tomato
  • 1/2 bell pepper
  • 1/2 onion
  • 1 clove garlic
  • 40 g bulgur
  • 1 tsp Middle Eastern spice mix
  • 5 g fresh mint
  • 5 g fresh parsley
  • pepper to taste
  • salt to taste

Instructions

  • Preheat the oven to 200 degrees Celsius.

  • Chop the tomato and bell pepper into pieces and finely chop the onion and garlic.

  • Mix the vegetables with the Middle Eastern spice mix.

  • Place the chicken breast in a baking dish and arrange the vegetables around it.

  • Bake the chicken for about 20 to 25 minutes until cooked through.

  • Meanwhile, cook the bulgur in plenty of water for about 10 minutes until tender, then drain.

  • Mix the bulgur with fresh mint and parsley.

  • Serve the chicken with the roasted vegetables and the spiced bulgur.
