Lentil Vegetable Stew with Ginger and Turmeric

Ingredients
- —120 g cooked lentils
- —140 g vegetables (carrot, cauliflower, spinach)
- —1 tsp olive oil
- —½ tsp grated fresh ginger
- —½ tsp turmeric
- —Pepper to taste
Instructions
Heat the olive oil in a pan and briefly sauté the ginger. Add the vegetables and simmer on low heat for 10 minutes until tender. Stir in the lentils and mix well. Season with turmeric and pepper. Let it simmer for another 2–3 minutes to blend the flavors.
Using lentils:
✅ Cooked lentils from a jar or can – Ready to use: rinse them in a sieve under cold water to remove the liquid (and salt). Then add them directly to the dish.
🌿 Dried lentils – Rinse thoroughly and cook for 15–20 minutes (red lentils slightly less, green or brown lentils slightly longer) until soft. Drain and use as described above.
Serving Tip
Delicious with some fresh cilantro or a squeeze of lemon juice for extra freshness.
