Ingredients

  • 150 g salmon, diced
  • 150 g white fish such as cod, diced
  • 100 g shrimp, briefly blanched and diced
  • Lemon zest

  • 2 handfuls of spinach, finely chopped
  • 3 tablespoons sour cream
  • 1 tablespoon yogurt
  • Microgreens for garnish

Instructions

  • Dice the salmon, white fish, and shrimp into small, even pieces.

  • Briefly blanch the shrimp and let them cool.

  • Gently mix the three proteins together to maintain the mosaic effect.

  • Season with lemon zest, salt, pepper, and finely chopped herbs.

  • Press the mixture firmly into a cooking ring to form a neat medallion.

  • Blend the spinach, sour cream, lemon, and chives into a smooth green cream.

  • Spread a thin layer of the spinach-sour cream mixture over the medallion.

  • Create a light lemon-chive sauce by mixing yogurt, lemon, and chives.

  • Place the medallion on a plate and garnish with microgreens.

  • Serve immediately, either cold or slightly chilled.
