Cauliflower Rice with Green Beans and Chicken

Ingredients

  • —120 g chicken breast, diced or sliced
  • —150 g cauliflower rice
  • —130 g green beans (cooked or steamed)
  • —1 tsp olive oil
  • —Pepper, salt, nutmeg
  • —Fresh herbs: parsley, chives, or dill
  • —Optional: 1 tsp lemon juice for freshness

Instructions

  • Cook or steam the green beans until tender-crisp (6–8 minutes).

  • Heat olive oil in a frying pan and sautĂ© the chicken pieces for 6–8 minutes until golden brown.

  • Add the cauliflower rice and cook for 4–5 minutes.

  • Stir in the green beans and season with pepper, salt, and nutmeg.

  • Sprinkle with fresh herbs and optionally add a splash of lemon juice.

Air fryer tip: Cook the chicken for 10 minutes at 180 °C, green beans for 8 minutes at 160 °C, then combine everything in the pan with the cauliflower rice.

Serving Tip

Serve in a shallow bowl with the cauliflower rice as the base, green beans mixed in, and chicken pieces on top. Garnish with fresh herbs for a bright, green touch.

Storage Tip

Store for up to 1 day in the refrigerator. Reheat in a pan over low heat with a splash of water.
