
Cauliflower Rice with Green Beans and Chicken
Ingredients
- —120 g chicken breast, diced or sliced
- —150 g cauliflower rice
- —130 g green beans (cooked or steamed)
- —1 tsp olive oil
- —Pepper, salt, nutmeg
- —Fresh herbs: parsley, chives, or dill
- —Optional: 1 tsp lemon juice for freshness
Instructions
Cook or steam the green beans until tender-crisp (6–8 minutes).
Heat olive oil in a frying pan and sauté the chicken pieces for 6–8 minutes until golden brown.
Add the cauliflower rice and cook for 4–5 minutes.
Stir in the green beans and season with pepper, salt, and nutmeg.
Sprinkle with fresh herbs and optionally add a splash of lemon juice.
Air fryer tip: Cook the chicken for 10 minutes at 180 °C, green beans for 8 minutes at 160 °C, then combine everything in the pan with the cauliflower rice.
Serving Tip
Serve in a shallow bowl with the cauliflower rice as the base, green beans mixed in, and chicken pieces on top. Garnish with fresh herbs for a bright, green touch.
Storage Tip
Store for up to 1 day in the refrigerator. Reheat in a pan over low heat with a splash of water.
