Cauliflower Rice Bowl with Black Beans, Chili, and Roasted Corn

Ingredients
- —150 g cauliflower rice
- —120 g black beans (drained and rinsed)
- —1 small red onion, finely chopped
- —1 clove garlic, minced
- —1 teaspoon olive oil
- —1/2 teaspoon chili flakes
- —70 g corn (fresh or canned), rinsed
- —1 teaspoon lemon zest
- —Juice of 1/4 lemon
- —Pepper and sea salt to taste
- —Handful of fresh cilantro or parsley
Instructions
- Heat the olive oil in a pan and briefly sauté the red onion and garlic.
- Add the corn and cook until lightly golden and roasted.
- Stir in the cauliflower rice and cook for 3–4 minutes until fragrant.
- Add the black beans and warm them through.
- Season with chili flakes, lemon zest, lemon juice, pepper, and sea salt.
- Serve in a bowl and garnish with cilantro or parsley.
