- —2 zucchinis
- —1 red onion
- —1 lemon
- —2 tablespoons olive oil
- —Salt and pepper to taste
Instructions
Preheat the BBQ until hot.
Slice the zucchini into thin rounds.
Cut the red onion into half rings.
Prepare large sheets of aluminum foil.
Place some zucchini and onion on each sheet of foil.
Lay a fish fillet on top.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Place a slice of lemon on top of the fish.
Fold the foil tightly to create packets.
Place the packets on the BBQ.
Cook for 12 to 15 minutes with the lid closed.
Carefully open the packets and serve immediately.
