Instructions
Preheat the oven to 180 °C (350 °F).
Chop the vegetables into pieces and place them in a small baking dish.
Crumble the goat cheese over the top and drizzle with olive oil, oregano, pepper, and basil.
Bake for 20 minutes until the cheese is golden brown and the vegetables are tender.
Serving Tip
Serve with a handful of fresh herbs like parsley or arugula for extra freshness, or enjoy it warm with a small piece of rye crispbread on the side.
