- —250 g chicken breast, cut into large pieces
- —250 g potatoes (waxy), cut into wedges
- —250 g vegetables (e.g., carrot, zucchini, bell pepper, or leek)
- —2 tsp olive oil
- —2 tsp lemon juice
- —½ tsp lemon zest
- —Pepper, salt, fresh thyme or rosemary
- —(Optional) 2–3 slices of lemon for topping
Instructions
Preheat the oven to 190 °C (375 °F).
In a bowl, mix the chicken, potatoes, and vegetables with olive oil, lemon juice, zest, pepper, salt, and herbs.
Spread everything evenly in a baking dish and optionally place the lemon slices on top.
Bake for 30–35 minutes until the chicken is cooked through and the potatoes are golden brown.
Serving Tip
A light, fragrant baked dish — the lemon adds freshness, and the potatoes satisfy without being too heavy. Serve with some fresh parsley or rosemary on top. Also delicious with a spoonful of yogurt dressing or a crisp green salad on the side.
Storage Tip
Store the baked dish (covered) in the refrigerator for up to 2 days. Reheat in the oven at 170 °C (340 °F) for about 10 minutes or in a pan with a splash of water.
